We look more into the viticultural aspects ,because 90% of the wine is made in vineyard. Factors that gives us the good quality are,

  • The grapes what we crush comes from the heart of the Wine capital of India i.e Nashik.
  • Cabernet sauvignon, Shiraz, Sauvignon blanc & Chenin blanc varietals are optimally grown in Nashik area from all wine varitals.
  • This area’s soil holds the key to varietals success which in turn helps in making good quality wine.
  • Perfect soil ,Balanced climate & knowledgeable viticultural practices makes

the regions best grapes tuned to be a very good quality wine.

SELECTION OF GRAPES
Our selection of grapes includes,
  • Analysis of the soil by our reputed lab analysts to find out which soil suits for which grape variety in order to get top quality berries.
  • Visit to the farms by our Italian wine maker himself in order to pick only the rightly ripen quality grapes.
  • The chosen farms are then checked for their degree & date of ripening,which includes analyzing individual berries sugar content [Brix] & Maturity of the berries.
  • Later the grape bunches are hand harvested [Usually between late Feb to end of March].
  • This process of hand harvesting is done usually in the early hours of the day & is done to get the Best out of the Best. Over ripe & under ripe berries are discarded.
  • Early hours harvesting helps the grapes to retain its flavor & aroma.
  • After harvesting we bring in our precious in a full temperature controlled vehicle in order to hold back the volatile senses of the berries.

 


TO MAINTAIN OUR QUALITY,

TEMPERATURE of wine is most important factor to maintain NATURAL parameters of wine and our wine grape harvesting mostly comes in the month of Feb & March. In these month, the temp. is above 30 to 35 degree C.

To achieve our quality of wine, we control the Temperature of grape juice by special designed “ Tubular coil type Heat Exchanger” for both RED and WHITE WINES.

IN PROCESS OF MAKING AND AGEING THE WINE,

A “CHILLING PLANT” with BOCK make compressor having 20 TR. Capacity and the TEMPERATURE range is from 30 degree C to –15 degree C.is taking care of temperature of wine.
